Celebrate the autumnal equinox with this mouthwatering vegan side dish. It’s been a part of my family’s Thanksgiving feast for at least 40 years!
This is the Thanksgiving dish I look forward to the most. It’s savory, nutty, satisfying and drop-dead delish! My uncle (an amazing cook) added this to the family’s Thanksgiving dinner menu many years ago. Though he’s since passed, we lovingly refer to it as “Uncle Don’s Dressing.”
1 cup white basmati rice
2 boxes Uncle Ben’s Wild and White Rice Mix
1 package meatless sausage (I use Lightlife’s Gimme Lean Sausage)
1 large sweet white onion, finely chopped
1 cup pine nuts, toasted
1/4 cup dried parsley flakes or 1 cup fresh, chopped
1 tsp ground sage
Preheat oven to 350 degrees F.
Prepare the basmati rice and the wild rice mix in separate pans according to package directions. Cook the onion until translucent. Add the meatless sausage by crumbling it into the prepared onions, and cook until heated through. Add the toasted pine nuts, parsley, and sage to the sausage mixture. In a large bowl combine the two rice mixtures and toss well. Add the sausage mixture, combining well. Place in a large casserole dish. Bake for 1 hour. This makes about 11 to 12 cups to serve a crowd during the holidays, but can be reduced by half to serve 6 to 8 people. (You’ll enjoy the leftovers, if any. Trust me on this.)
